Delight of Provencal aperitif with olive oil (verrine of 90 g)

These vegetable preparations cooked with olive oil are ideal to taste on toast as an aperitif.

They are composed of local ingredients without preservatives, palm oil, GMO or flavor enhancer. Only the mix of flavors and herbs gives a delicious reminiscence of summer evenings in Provence.

In this menu, we offer 2 variants with lots of fruits and vegetables from Provence, often very popular.

Fish and game terrines (2 verrines of 80 g)

After the appetizers, a pheasant terrine and a smoked salmon terrine will be perfect to complete the entry.

The pheasant is a fine game meat and likely to please everyone. It’s cooked in Porto wine for special occasions. Traditional recipes are put in the spotlight by this old culinary workshop from Aix en Provence.

We add a terrine of smoked salmon, seafood that we love to find in a festive menu, for a tasting with finesse.

These appetizers will bring melt and freshness, and will harmonize perfectly with the Clairette de Die.

Gourmet dish (400 g)
hare stewduck with olive

As the main dish, you may choose between 2 delicious recipes of French gastronomy: duck with olives or hare stew.

These dishes are cooked in Provence in the respect of the original recipes with local products. They are flavored with condiments and herbs with aromas of garrigue and olives.

A tasty balance for the pleasure of the taste buds.

What is more suitable than the Camargue rice as a side dish for a festive meal?

We offer a white rice out of the ordinary, PGI labeled and naturally fragrant. It’s rich in all the diversity of the Camargue terroir, and it will be perfect!

Fruit dessert (210 g)

A choice of cooked Provencal fruits, caramel mendiants and vanilla aroma, or Prunes with Muscat de Lunel, to bring a light, melting and gourmet note at the end of the meal, before confectionery.

These desserts are still without preservatives, GMO, palm oil or flavor enhancer ... Only good food!

Chocolate Delights

To finish on a sweet note with the cocoa taste, you can choose among the candied oranges in chocolate (100 g) and the nougat disguised as a truffle (150 g).

Quite unknown, the Clairette de Die is a sparkling white wine vinified according to the ancestral method for 2000 years and recognized AOC since 1942.

This is the 'champagne' of Provence: the small parcels of vines are located in valley of the Drôme, on a soil bathed in sunlight. It’s harvested by hand.

The Tradition cuvee from Maison Jaillance is rewarded every year. In particular, it won the 2018 and 2019 Gold Medal of the Concours General Agricole of Paris and the Concours des Grands Vins de France of Macon, among others.

The Clairette de Die, fruity and light (only 7 degrees of alcohol), is an exceptional drink that accompanies all the festive menus with perfection.
