At Christmas, nougat is one of the 13 desserts that are presented on the table for Christmas Eve dinner. It’s sometimes homemade, and comes in two versions: black or white.
The traditional black nougat is crunchy, made from heated honey and toasted almonds that are placed in an elongated box previously covered with wafer paper. It’s difficult to spread the almonds evenly when the honey has hardened.
Some prefer white nougat, more tender. It’s based on egg whites, honey, almonds and pistachios. You can find a sweeter taste than black nougat.
