This is a great classic, generally appreciated as a gourmet gift.
It has been the specialty of this confectionery near Aix since its creation in 1880. These calissons strictly follow the specifications of Aix manufacturers, and are composed of 46% candied melon, almonds and orange peel. The glaze is fine and delicate, scented with vanilla.
The calissons won the "Grand Prix de France" award ... to the delight of gourmets.

This tender nougat, generally made with honey, almonds and egg white, is offered here in classic white vanilla flavour.
Taste them because they are surprisingly modern without distorting the known flavor of white vanilla nougat.

Here is the Christmas mendiant of Provence, usually presented in the shape of a round puck. The confectionery workshop manufactures this specialty near Aix en Provence. The initial recipe was kept but a square shape was adopted for a larger format.
It’s an organic chocolate with a high cocoa content, dark or milk of your choice (74% for dark chocolate and 39% for milk chocolate), from a rare and very tasty bean. The pieces of candied orange blend with the roasted almonds to evoke the Mendicant Orders.

This artisanal nougat is fine and crunchy, with a good proportion of pistachios.
It will appeal to all gourmet lovers of honey and sweetness. Also, it’s one of the thirteen Provençal desserts, with its cousin the white nougat. They symbolize black and white penitents on Christmas Eve.
