Duck terrine with figs
A recipe that combines the finesse of duck (we have lots in Camargue), with the sweet taste of fig, the Provencal fruit par excellence. It's subtle but delicious!
Ingredients: Duck meat 20% (duck meat from France, salt), pork fat, pork liver, chicken liver, figs 6% (figs, water), white wine, whole MILK, water, nutmeg, eggs whole, salt, pepper, possible traces of nuts. Contains sulphites. Jar of 90 g.
Quail terrine with Sauternes
Quail was once hunted in Provence by our grandparents because it was highly prized as a festive dish. Quail terrine is therefore a tradition that continues, and this one, flavored with Sauternes, is perfect for a festive starter!
Ingredients: Mechanically separated quail meat from EU origin 20%, pork fat, poultry liver, pork liver, Sauternes 4%, whole MILK, water, whole eggs, salt, pepper. Jar of 90 g.
Rabbit terrine with garrigue flavors
The famous garrigue rabbit, fed on Mediterranean plants, and cooked with aromatic herbs: this terrine is really VERY fragrant and tasty! You will be transported to Provence.
Ingredients: Rabbit meat 20%, pork fat, pork liver, whole milk, water, thyme 0.8%, whole eggs, salt, pepper, wine, spices. Possible traces of nuts. Serve chilled. Contains sulphites. Jar of 90 g.
Goose terrine with duck foie gras
A must-have product for festive tables and always very popular with gastronomes and not just food lovers.
Ingredients: Duck foie gras, goose meat (EC origin) 20%, pork fat, pork liver, chicken liver, wine, whole MILK, whole eggs, salt, pepper, spices. Possible trace of nuts. Contains sulphites. Jar of 90 g.
The game of Provence
In the past, the Provencal region had a large fauna adapted to the Mediterranean climate or more mountainous depending on the location. On the fields and pine forests, there were many small game birds, thrushes, quails and partridges. Everywhere, the wild rabbit also roamed the scrubland. On the Camargue ponds, it was the mallard duck and other waterfowl such as snipe.
Not surprising that many traditional culinary recipes contain game, in the form of terrines, stews and civets. Rich and tasty dishes that are mainly eaten during festive meals in winter.
