The green ‘gold’ of Provence
This is the name given to olive oil, a precious treasure of southern French terroir. Its color ranges from golden yellow to translucent green depending on the variety(ies) of olives crushed to obtain the liquid.
Some oils are very fiery or tasteful, almost spicy, and others are milder, fruitier or rounder.
The terroir also affects the taste: the AOP of Aix en Provence will not have the same flavor as the AOP of the Vallée des Baux. These terroirs are slightly different, hence the existence of protected designations of origin.
The same goes for the time of harvest: more or less green, or riper. Sometimes, we wait a few more days after harvest to let the olives ripen before crushing. This is the ‘ripe fruitiness’ taste, soft on the palate.
