Ingredients : Candied melons (melons, sugar, glucose syrup, preservative: almonds, sugar, icing sugar, candied orange peels (orange peels, sugar, glucose syrup), wafer paper (potato starch, water), glucose syrup, egg white, natural vanilla, apricot, lemon, blackurrents, pistachio, vanilla flavour, colouring agents: E160, turmeric extract, E163, E141. All colourings are naturals, the artificial light can alter the colour of the glazing.
This product may contain traces of nuts other than those listed above, gluten and sulphite.

Ingredients: Candied melons (melons, sugar, glucose syrup, processing aid: sulfur dioxide (E220)), additive: citric acid (E330), almonds, cane sugar, candied orange peel (orange peel, sugar, glucose syrup, additive: citric acid (E330)), glucose syrup.

The candy diamond is a well-known specialty from Aix en Provence, tradition of the XVth century, based on candied melons, almonds and orange peel. Its shape is recognizable among all, but it’s not enough to look like a calisson to be truly one. There are counterfeits!
These are authentic, made in the Pays d'Aix by a creative confectioner, a calissonnier. He’s know-how is recognized by the Entreprise du Patrimoine Vivant French label.
There is also a festival dedicated to them: the calissons blessing. Every year at the beginning of September, the Archbishop of Aix en Provence proceeds to the religious ceremony. On this occasion, Provencal people in traditional clothes distribute calissons to the public. It's a great event!
