Provencal Christmas Eve
In Provence, at Christmas Eve, we traditionally avoided meat for dinner if we have dinner before the Midnight Mass.
Therefore one find, among the most popular menus, dishes based on fish and vegetables since they are products of the Mediterranean and the terroir. There were normally seven of them. The bagna caudo, the fish soup, the aigo boulido, the gratin of cardes, and other winter vegetables are some examples.
Three white tablecloths are superimposed on the table of guests to symbolize the Trinity. We put the wheat of the Sainte Barbe there, then the dishes and the thirteen desserts at the beginning of the meal. The number thirteen refers to the last meal of Jesus with his apostles. An extra plate is provided in case a poor person knocks on the door.
